Method

Prepare the polenta

Bring the salted water to the boil, then gradually add the cornmeal while stirring with a whisk.

Cook

Cook the polenta, stirring frequently, for 45-50 minutes.

Add the cheese

When the polenta is almost ready, add the diced Ossolano cheese and stir until melted.

Enrich

Add the butter in small pieces and stir vigorously off the heat.

Serve

Immediately pour into a warm serving dish and serve piping hot.

Tips

Stir the polenta off the heat to achieve a stringy texture without burning the cheese.

Variations

It can be enhanced with a sprinkle of black pepper or a drizzle of cream.

Storage

It is best eaten freshly made; leftovers can be sliced and grilled the following day.
