Method

Prepare the dough

Mix the flours with the sourdough starter and gradually incorporate the water. Add the salt and work until you have a smooth, even dough.

First proof

Cover the dough and leave it to prove until it looks well relaxed and has increased in volume.

Enrich the dough

Incorporate the softened butter, walnuts, raisins and apples, distributing them evenly.

Work gently to avoid breaking up the fruit too much.

Shape and rest

Shape into one loaf or several small loaves and leave to rest again.

Bake

Bake in the oven until the crust is well coloured and the bread is dry in the centre.

Leave to cool slightly before serving.

Tips

Dry the raisins and apples well before incorporating them, so the dough remains more stable. The following day, the flavours are even better blended.
