Method

Make the dough

Work the flour and water until you have a smooth, soft dough.

Rest

Cover and leave the dough to rest.

Roll out

Divide into portions and roll out into very thin sheets.

Cook on the iron plate

Cook the sheets on a very hot iron plate or griddle until dry and lightly crisp.

Season

Serve immediately with melted butter and salt.
